Ingredients:

  • 8 oz shrimp, peeled and deveined
  • 4 small flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup bell peppers, sliced
  • 1/4 cup onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Kitchen Tools Needed:

  • Skillet
  • Spatula
  • Knife
  • Cutting board

Instructions:

  • Heat olive oil in a skillet over medium heat.
  • Add shrimp, garlic powder, cumin, salt, and pepper. Cook until shrimp are pink and cooked through, about 3-4 minutes.
  • Remove shrimp from skillet and set aside.
  • In the same skillet, add bell peppers and onion. Sauté until softened, about 3-5 minutes.
  • Place one tortilla in the skillet, sprinkle half of the cheese on one half of the tortilla.
  • Add half of the cooked shrimp and sautéed vegetables on top of the cheese.
  • Fold the tortilla over and cook until golden brown, about 2-3 minutes per side.
  • Repeat with the second tortilla and remaining ingredients.
  • Cut quesadillas into wedges and serve with sour cream and salsa.
