Ingredients:

  • 2 lamb chops (about 200g each)
  • 4 medium potatoes (about 150g each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 lemon, sliced (for garnish)

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Wash and dry the potatoes, then make several deep cuts across the top of each potato, being careful not to cut all the way through.
  • In a large bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  • Coat the potatoes with the olive oil mixture, ensuring the oil gets into the cuts.
  • Place the potatoes in the center of a baking dish and arrange the lamb chops around them.
  • Drizzle any remaining olive oil mixture over the lamb chops and season with salt and pepper.
  • Bake in the preheated oven for 25-30 minutes, or until the lamb is cooked to your liking and the potatoes are tender and crispy on the edges.
  • Serve hot, garnished with lemon slices.
